The indigenous Guaraní first cultivated and consumed yerba mate prior to European colonization of the Americas. Mate was originally consumed from a gourd, using a metal straw, and this is still how it is consumed in many parts of South America.

Preparation

Although traditionally made from a hollowed calabash gourd, these days mate "gourds" are produced from wood, glass, bull horns, ceramic, and silicone. The recipient drinks the few mouthfuls in the container, and then returns the mate to the brewer, who refills it and passes it to the next person in clockwise order.

The bombilla acts as a sieve. Argentines carry thermo flasks to keep water warm as the mate is refilled several times.

Yerba mate consumption in Argentina rises up to 14 pounds a year per capita. It is ingested in 90% of the country’s households and more than a pound is included monthly in the basic food basket.

In Paraguay, Brazil, and Argentina, mate cocido in teabags or loose-leaf form is sold sweetened on the street, hot or iced, pure or with fruit juice or milk.

In Argentina, the yerba mate is popular, but means more. It is a source of pride, an excuse to meet and a custom transmitted by families. “Shall we drink some mates?” is an invitation to chat, debate, reduce distances.
